We Love This Japanese Mushroom Salad [EASY]
Select a variety of mushrooms that you like. We have used shimeji, enoki and baby oyster mushrooms
Wash and trim Japanese mushrooms. In large frypan, add olive oil and stir fry for a couple minutes.
Add Japanese mushrooms to rice vinegar, tamari, mirin and sugar to marinate until serving.
Blanch spinach for 30 seconds and then drain. Squeeze excess water from spinach.
To assemble, layer blanched spinach in a bowl and then dress with Kewpie Roasted Sesame Dressing
Add marinated Japanese mushrooms on top of spinach. Sprinkle toasted sesame seeds to serve.
Serve with grilled fish, udon noodles or steamed rice. Easy and tasty mushroom salad as a side dish.
