Wedge Salad With Blue Cheese Dressing
Place bacon on a foil lined baking sheet. Bake at 400 for 10 minutes or until crispy.

Slice the top of the red onion. Peel the skin off. Slice in 1/4 inch slices.

Cut the tomatoes in half. You can use a serrated utility knife for this.

Remove the end of the iceberg, slice in 1 inch slices. Place desired amount onto your serving plate.

Slice bacon into 1/2 inch slices.

Top the iceberg slice with red onion, tomatoes and bacon.

To make the blue cheese dressing combine Greek yogurt, buttermilk, white balsamic, salt and pepper.

Crumble the blue cheese and add to the dressing. Stir to combine.

Top the salad with extra blue cheese. Drizzle with dressing and top with fresh cracked black pepper.
