White Bean, Butternut And Roasted Garlic Dip
This is the perfect recipe for overcooked white beans like these

You’ll need 1 cup of any cooked white bean

Add 1 cup of roasted butternut squash (perfect for leftovers!)

Remember that caramelized garlic we made? You’ll need about 2 tbsp of that

Add 1 tbsp lemon juice
5
Add 1 tbsp red wine vinegar

Add 1/4 cup of olive oil and blend (more if needed to make it smooth) & a pinch of salt

Serve with chunks of butternut, pomegranate “jewels” (as my boys call them) and a swish of olive oil
