White Bean, Kale & Sausage Stew

8 oz carrots finely chopped

1 medium onion finely chopped and 2 garlic cloves, pressed

Heat 1 tbsp olive oil in Dutch oven over medium heat 3-5 min. Add 8 oz hot Italian sausage, casings removed. Cook 6-8 min, breaking into crumbles.

Remove sausage. Add carrots, onions, garlic, 2 C cherry tomatoes, 1 tsp oregano. Heat 4-6 minutes. Chop 1 bunch kale into bite-sized pieces.

Add sausage, 4 C chicken stock, 1 15-oz can Great Northern beans and kale. Bring to simmer over medium-high heat. Cook uncovered 5-10 min.

Top servings with freshly grated Parmesan cheese. Enjoy!
