White Cheddar Cauliflower Soup
Prepare your ingredients before you begin.

Cook 6 cloves minced garlic in 1 T olive oil over medium heat.

Stir in 4 C riced cauliflower and 2 T water. Cover and steam, stirring occasionally, for 5-7 min.

Add 1 1/4 C chicken stock, 1 C heavy cream, 1/2 t salt & 1/4 t pepper. Bring to boil and cook 5 min.

Use an immersion or stand blender to puree the soup until silky smooth.

Remove from heat and stir in 8 ounces of white cheddar cheese until completely melted.
