Melt the butter in a saucepan over medium heat and add the flour.
Cook the flour, stirring constantly, until the raw flour smell goes away (1-2 minutes).
While whisking constantly, begin pouring the milk in little by little.
Make sure to get rid of the lumps before pouring the rest of the milk in.
Once it is all lump-free, allow the sauce to come up to a boil and thicken slightly.
If you run your finger down the back of a spoon dipped into the sauce, it should stay separated.
To finish, season with salt and pepper.
At this point, you can add any of your favorite cheeses to make a cheese sauce. You can also leave it without any cheese for a plain white sauce.
You can use this sauce in pasta, lasagna, pizza, or a variety of other dishes.
