White Velvet Cake With Milk Chocolate Ganache
Grease and line a 9x9 pan. Preheat oven @170 deg C / 340 deg F

In a small bowl add flour sugar baking powder and salt. Whisk n set aside

In another large (mixing bowl) add egg whites, oil, butter milk vanilla extract. Whisk and set aside

Cut butter into small cubes ( colder than room temperature butter)

Add the cubed butter to the whisked flour mix

On low speed whisk until the butter mixes well.

This should resemble like coarse flour

Add the whisked wet mix (egg whites buttermilk oil n vanilla) that we already mixed and kept aside

On low speed whisk to form a smooth cake batter

In a small bowl add 1 tbsp vinegar and 1/4 tsp baking soda. Let it fizz

Add the vinegar and soda mix to the cake batter. Give one final mix. Transfer to the greased pan and bake for 30 to 35 mins

Make the ganache heat the cream until it bubbles

Add chopped milk chocolate to a bowl. Pour the hot cream and let it sit on the counter for 5 to 8 mins

Use a spatula and work your way to a smooth mix. This is your ganache.

Let it cool down to your required consistency. You can then use it as a frosting on your cake
