Cook sausage until no longer pink

Cook sweet potatoes and onions in the sausage fat on medium heat until you get just begin to soften

Throw spinach in the pan and stir until wilted

Add sausage to the prepared dish and then add potato and onion mixture

Whisk together the eggs, salt, cashew milk and Roma tomatoes

Add the spinach to the egg mixture

Pour the egg mixture over the potatoes and then bake at 375 for 30-35 min
