In a large bowl, add shredded cabbage and carrots. I like to use a mix of green and purple cabbage!
For the coleslaw dressing, combine apple cider vinegar, salt and pepper, and avocado mayo in a small bowl.
Pour the dressing over the shredded cabbage and carrots.
Stir to fully coat the cabbage in the dressing.
Cover and refrigerator for 30 minutes or until ready to eat. Serve with your favorite grilled or smoked meats.
