Fill the cups half way with veggies of choice.

For this recipe, I used brussels sprouts, onions, and bell peppers.

In a bowl, crack 6 eggs.

Add milk (coconut, almond, or regular).

And salt and pepper. I used The Basic.

Break the yolks and whisk to evenly combine.

Pour the egg mixture over the veggies.

Bake for 20-25 minutes or until the center is set.
