Whole30 Green Chile Breakfast Casserole
Preheat oven to 400. Add 1 tsp avocado oil to saucepan, sauté diced onion until translucent.

Melt a tbsp of ghee and lightly brush inside of baking dish to coat/avoid sticking.

Add a cup of (pre-cooked) diced potatoes to the baking dish.

Add compliant sausage to the onions in the pan and cook through.

Add chopped spinach, diced zucchini, & roasted/chopped green chile. (I used Zia Hatch Chile Co)

Whisk eggs and pour over ingredients in baking dish.

Add garlic powder and salt, then add cooked sausage to the dish.

Mix ingredients until well combined. Bake 25-30 minutes or until middle of casserole is “set.”

Serve + Enjoy! This casserole is great reheated, too. Make ahead for the week!
