Whole30 Green Chile Ranch Dressing
Double batch instructions: Start with 2 cups extra light olive oil, and add 2 eggs.

Add 2 tbsp lemon juice + 4 tbsp red wine vinegar...

Add 1 cup full fat canned coconut milk...

Add 2 tsp salt, 2 tsp pepper, 1 + 1/2 tsp onion powder, and 1 + 1/2 tsp garlic powder.

Add 1 cup fresh cilantro.

Begin blending, hovering at bottom of the measuring cup and slowly pull up as ingredients mix.

Stop blending, then add 1/2 - 1 cup chopped roasted Hatch Green Chile.

Blend again until all ingredients are integrated.

Transfer into storage container and refrigerate. (Note the date on the egg carton for expiration)
