Whole30 Hatch Green Chile Mayo
Pour 1 + 1/4 cup oil into measuring cup or wide mouth jar.

Add egg, 1/2 tsp salt, and 1/2 tsp mustard powder. Note egg expiration date for food safety!

Juice a lemon... you’ll need 2 tbsp

Add lemon juice to your jar...

Using an immersion blender, hover over the egg and start blending...

Slowly pull blender upwards, allow ingredients to emulsify.

Add 1/4 cup roasted, chopped hatch green chile, 1 clove minced garlic, and 1 tbsp fresh lime juice.

Blend until well combined and enjoy on burgers, mixed into tuna or salmon salads, and more!
