Place potatoes in a large pot and cover with cold water. Add salt and stir
Once boiling, reduce heat slightly. Cook 15-20 min
Melt the ghee and heat the cashew milk in a small pan on medium heat
When potatoes are fork tender, drain and mash with a potato masher
Stir in ghee and milk mixture until fluffy. Season to taste
