Place halved/seeded bell peppers in a pot and cover with water. Bring to a boil ans cook 2-3 min

Meanwhile, place cauliflower in a good processor and pulse until broken down and rice-like

Heat oil on medium high heat and add cauliflower rice. Cook until lightly brown, 4-5 min

Add ground turkey, salt, ans cumin to the pan and cook until the meat is no longer pink

Add the salsa ans cook until the liquid begins to evaporate, about 3-4 minutes

Fill the peppers with the turkey mixture

Bake uncovered for 20-30 min, until the peppers are tender

Remove from oven, garnish, and enjoy!
