Whole Wheat Cranberry Zucchini Bread
Add baking soda, baking powder, kosher salt and cinnamon to whole wheat flour.

Whisk the dry ingredients together and set aside.

In another bowl, combine shredded zucchini, applesauce, brown sugar, vanilla and almond extracts and eggs.

Mix it all together until well combined.

Add the dry ingredients to the wet ingredients and mix until just a few streaks of flour remain.

Add the cranberries and mix until incorporated and no flour pockets remain. The batter will be thick.

Pour batter into a greased loaf pan and bake for about an hour. The bread is done when a toothpick inserted in the center comes out clean.

Remove baked bread from the oven and allow to cool in the pan on a cooling rack before slicing and serving.
