Yummy Banana Pecan Muffins
Perfect for a make ahead breakfast or packed lunch snack!
Gather your ingredients…
Mash three very ripe bananas. I like to use a pastry blender to mash, but you can use a fork, too!
Add 1/4 cup unsalted butter, melted
Add 1/4 cup milk.
Use a whisk to mix well
Add one egg, 1 tsp vanilla, 1/2 cup brown sugar and 1/2 cup white sugar.
Add 2 cups flour, 1 tsp salt and 1 tsp baking soda. Mix just until incorporated, taking care not to over mix. This keeps the muffins tender 💗
Fold in 1 cup nuts. You can use pecans, walnuts or even macadamia nuts. We have a variety of nuts at our house! 😉
Fill muffin cups about 4/5 full. Bake at 350°F for 18-20 minutes until a toothpick inserted in the middle of a muffin comes out clean. Let cool.
