Zesty Spanish Potato Salad
Boil diced potatoes in a pot until easily pierced with a fork. Drain and set aside.
Place eggs in a sauce pan. Cover with water bringing the water to a boil. Peel the eggs and cut into small pieces.
Mix mayo, whole grain mustard, lemon juice, smoked paprika, garlic powder, onion powder, and a pinch of salt and pepper in a small bowl.
In a large bowl add the potatoes, eggs, olives, and chives.
Drizzle the dressing over the ingredients and mix together.
Garnish the salad with the egg slices, a few extra olives, chopped chives, and a sprinkling of smoked paprika.
