Zucchini, Sausage & Sweet Pepper Frittata
Set oven to 350F.

Brown 1lb turkey sausage on medium high heat in 10"Cast Iron Skillet.

Remove sausage from skillet with a slotted spoon and set aside, leaving 1–2 tablespoons of drippings in the pan.

Finely chop a medium shallot.

Add shallot to skillet and saute 2–3 minutes over medium-high heat to soften.

The recipe calls for 1lb of grated zucchini, but I like to julienne the zucchini with my Rapid-Prep Mandolin instead.

Set to "Julienne" and "1" thickness.

Add zucchini, 3/4 tsp salt, and ground pepper. Cook on medium-high heat 5–7 minutes or until liquid has released and evaporated from the zucchini.

Chop one sweet pepper.

Add bell pepper during last 2 minutes of cooking, when zucchini is almost dry.

Stir in cooked sausage, Pampered Chef's Herbs de Provence, and remove from heat.

Lightly beat 8 eggs.

Pour in lightly beaten eggs, stir to combine and place in preheated oven for 25–30 minutes or until eggs are set in the middle.

Remove from oven and let sit 5 minutes before slicing into wedges to serve.
