Preheat skillet to medium-high. Melt 2 tbs of butter.

Once the butter is bubbling, add 1 minced shallot and 1 tbs of minced ginger.

Add 1/2 cup of dry sherry. Stir in to coat shallots and ginger. Cook for 3 min. to burn off alcohol.

Add 1 tbs of Better Than Bouillon and 1/4 cup water. Cook for another 2-3 minutes.

Add in zucchini. Stir to coat with sauce. Cook for 6-7 minutes, stirring occasionally.
