Gather your ingredients
Spiralize a medium size zucchini and set aside

Clean and slice 2 1/2 cups mushrooms

Grate & Shred a medium size carrot

Sauté 1/2 tbs sesame oil, 1 tsp ground ginger, 1 clove garlic, and mushrooms for 2 minutes

Add zucchini and sauté for 5 more minutes

Add 2 Tbs soy sauce, 4 cups vegetable broth, and red peppers flakes (optional) to taste

Bring to a boil. Add 1 cup spinach and your grated carrot. Simmer for 2-3 more minutes
