Fluffy Buttermilk Scones

Butter, 120g
Plain Flour, 510g
Salt, 1 tsp
Granulated Sugar, 2 tbsp
Butter, 120g
Plain Flour, 510g

Granulated Sugar, 2 tbsp
Honey, 1 tbsp
Baking Powder, 2 tbsp
Buttermilk, 240 ml
Pulse the dry ingredients and butter in a a food processor till it forms bread crumbs

Pour flour into a bowl and make a well in the center. Add buttermilk

Add honey

Stir everything together till just combined. Dough should be crumbly

Place dough on a floured surface

Flatten the dough into a rectangle with your hands

Fold the dough over in halfs. Flatten & repeat 2 more times

Dough should look like this after flattening and folding 3 times

Cut the dough using a scone cutter. You should be able to see the layers

Brush the tops with buttermilk

Bake at 170°C for 15 minutes.
