Morning Glory Muffins
7 STEPS
To a large bowl add 2 eggs, 1/4 cup oil, 1/3 cup banana, 1/4 cup maple syrup & 1 tsp vanilla

Add 1/2 cup each of apple sauce and brown sugar

Then 1 tsp baking soda, 1 tsp cinnamon, 1 cup shredded carrot & 1/4 cup milk

Next, add 1/2 cup oats, 1/2 cup almond flour and 1 cup all purpose flour. Mix well.

*Optional: fold in 1/3 cup each of pecans/walnuts and shredded coconut

Divide amongst a lined muffin tray, bake at 375F for 18-22 min
