Cut each sheet of puff pastry into four equal pieces so you will have a total of eight pieces.

Using a pastry brush, paint the corners of each square with egg wash.

Fold all of the corners in so they meet in the middle.

Gently press down in the center; set aside

To make filling, beat the cream cheese and the sugar together until well blended.

Add in the egg yolk, yogurt, lemon juice, lemon zest, vanilla, and salt.

Beat until just combined.

Top the center of each pastry with cheese filling.

Top each mound with a spoonful of apple filling. Bake in a preheated oven until golden.
