Apple Cranberry Coleslaw
Perfect as a side dish or lunch
Assemble your salad
In a large bowl combine 14 ounces shredded coleslaw, 1/4 cup dried cranberries
2 Tbsp sliced almonds and 1 diced sweet apple.
Prepare the Maple Vinaigrette
In a mason jar combine 1 T minced garlic, 1 T Dijon mustard, 3 T apple cider vinegar
1 T lemon juice, 2 T real maple syrup, 1/2 cup olive oil & salt/pepper. Shake vigorously to combine
Pour 1/2 the dressing over coleslaw and stir to combine. Reserve remaining dressing for another use
This will keep for several days in the fridge ☺️
