Bacon & Blue Cheeseburger Jalapeño Poppers
1/2 pound ground beef, 8 jalapeño peppers, 1/3 cup blue cheese, 8 slices bacon, salt & pepper
Cut each pepper in half. Clean out seeds and membrane, leaving some if you like your poppers spicy.
Season ground beef with salt & pepper. Cook on medium until no longer pink. Stir in blue cheese.
Fill each pepper half with the ground beef.
Wrap each pepper half with half a slice of the bacon and secure with a toothpick.
Place on a rack over a baking sheet. Bake at 375F for 25 min or until tender.
