Boil 200gm chicken with 2 small ginger pieces, 2 garlic cloves and a sliced scallion. Dont overcook.

In a pan,toast 2tbsp sesame seeds

Heat oil in a pan add 1/2tsp black pepper and leftover white end of the scallion and garlic, sauté

Add 2tbsp soya sauce and 1 tbsp of white vinegar. Let it simmer

Add toasted sesame seeds,1tbsp chilli oil, 1tbsp honey, reserved chicken stock & 2tbsp lime juice

Finely slice a cucumber

Shred the chicken and lay the cucumber on the serving dish

Drizzle the dressing and serve!
