Beef and Mushroom Enchiladas
Prepare your ingredients before you begin.

Heat olive oil in a large skillet and add sliced sweet peppers. Cook until soft, about 5 minutes.

Stir in rice, water and half the spice mixture. Bring to a boil, reduce and simmer 20 minutes.

Once the rice is tender, place in the bottom of a large casserole dish, then prepare the enchiladas.

Heat the olive oil in a large skillet over med-high. Add onion and shallots. Cook until softened.

Add the ground beef, mushrooms, and half of the spice mixture.

Cook the beef and mushrooms until the beef is no longer pink, about 5-7 minutes.

Warm tortillas in a skillet of medium for 15 seconds. Fill with the beef mixture.

Fold in sides and roll to close, place in the baking dish. Top with enchilada sauce and cheese.
