Prepare your ingredients before you begin.
Brown 2 lbs beef in butter until medium rare, or to your preference. Remove.
Add 1/2 cup shallot to the pan and cook, stirring frequently, until softened, about 2-3 minutes.
Add 1 lb mushrooms and cook until the pan is mostly dry, about 3-4 minutes.
Add 1 cup demi-glace, bring to a boil, then lower the heat and simmer about 10 minutes.
Stir in 1 C heavy whipping cream, 1 C sour cream, 1 T dijon mustard and the beef. Season to taste.
