Black Bean and Lime Soup
30 oz black beans, 2 C veg stock, 1/2 t cumin, 1 shallot, 3 cloves garlic, 1 lime, 1/4 C cilantro

Melt butter over medium heat. Add garlic & shallot. Cook 2-3 min then stir in cumin and cook 1 min.

Pour in vegetable stock & black beans. Cook 15-20 minutes.

Puree soup and cilantro with an immersion blender or stand blender.

Stir in lime juice & zest and season with salt and pepper.
