Black Bean & Poblano Flautas
Dice tomato.

Dice 2 scallions.

Halve lime.

Halve & peel onion. Thinly slice.

Combine tomato & scallions in prep bowl. Add juice of half a lime, drizzle EVOO, salt & pepper.

Core, deseed & dice poblano pepper into 1/2 inch pieces.

Heat oil in skillet; add onion & pepper. Cook 5-6 minutes.

Heat drizzle of oil in saucepan; add 7 oz cooked black beans & 1/4c juice from beans. Heat til warm.

Add 1T Southwest spice, 6-7 oz cooked black beans. Cook 2-3 mins.

Season beans with salt & pepper. Mash.

Add 1 T butter if desired.
Add mashed beans to tortillas. Top with onion mixture & pepper jack cheese. Roll.

Add flautas to skillet preheated with oil. Cook 1-2 minutes per side until browned & crispy.

Top cooked flautas with pico & sour cream. Add guacamole if desired.
