Blistered Shishito Peppers with Pesto Dip
Wash and dry 2 dozen shishito peppers, dry and puncture each pepper before cooking
Heat a skillet with olive oil, add your peppers and cook on each side for a few minutes
Add your peppers to a bowl, top with lemon juice, and sprinkle with salt
Now let’s make homemade citrus pesto dip
Blend 4 bunches of parsley without the stems, lemon juice, minced garlic, parmesan cheese, pepper and salt
Once well-combined, slowly begin adding olive oil, then continue to process until combined
Serve, and enjoy!
