I am making Brinjal & White Pumpkin Kootu!

5 medium sized brinjals and 250g white pumpkin diced into small pieces!

Add 1 green chilli, 1 tsp mustard seeds, orid dal,chana dal, red chilli & asafoetida!

I've marinated about a small sized lemon and salt accordingly!

I've marinated in cup of water!

Two cups of Moong Dal pressure cooked!

Add 1 tsp oil for tempering!

Add mustard seeds,allow it to crackle and add orid dal & chana dal and red chilli and asafoetida for tempering!

Add chana dal, asafoetida and saute! Asafoetida is good for digestion!

Saute lightly till golden brown!

I am using induction cooktop! I've pause button! It's convenient! Add the vegetables! Goes best with Pongal or with chapatthi or rice also!

One healthy stew!

Add 1 tsp sambhar powder, 1/2 tsp turmeric powder, curry leaves and mix well!

Allow the brinjal and white pumpkin to cook well!

The vegetables have cooked well!

Add tamarind water to the vegetables! Alllow to boil well!

The tamarind flavour has subsided! Add the moong dal!

Goes well with rice,chapatthi!
