Mix flour, cinnamon, baking powder, baking soda, salt, and nutmeg in a medium bowl

In a separate large bowl, whisk eggs, coconut sugar, coconut oil, and vanilla together

Add the dry ingredients to the wet ingredients and mix well

Fold in strained pineapple chunks, grated carrots, and finely chopped pecans

Spread batter into the prepared loaf pan and place into the oven

Bake for 1 hour to 1 hour + 10 minutes until a toothpick from the center comes out cleanly. Let it cool in the pan completely

For the frosting: beat cream cheese and butter together with an electric hand mixer until fluffy

Add in vanilla and a pinch of salt. Beat again

Add the sugar in a little at a time and beat until smooth
