Cashew Chicken Stir Fry
Take 500gm chicken

Add 1/2 tsp chilli flakes

Add 1 tsp ginger/ garlic paste

Add 1tbsp soya sauce and an egg

Add 1/4 cup cornflour

Season with 1tsp salt and pepper

Add 1 tbsp of olive oil

Mix well until all ingredients are combined

The chicken will be coated with the batter. Marinate for 30 mins

Heat oil on medium heat and fry the chicken pieces , you can also airfry them

Fry until the chicken is golden brown

Drain excess oil on a paper towel

In another pan, take 1 tbsp olive oil and add 3-4 long red chilly

Now add 1/4 cup cashews and fry

Add 1/2 cup mushrooms and fry

Add 1 tsp garlic paste and sauté

Now add 1 cup of freshly cubed onion and capsicum and stir fry

Next add 1/4 cup ketchup mixed with 1/4 cup chilli garlic sauce and 1 tsp brown sugar

Add 1/2 cup chicken stock

Add the fried chicken to the the stirfry

Season with 1tsp chilli flakes and 1/4 tsp pepper

Let it simmer until the sauce thickens

You can vary the recipe by adding sliced carrots, zucchini, broccoli, snow peas
Serve hot with white or brown rice
