Cast Iron Bacon, Veggie & Feta Frittata
What you'll need
4 grinds
Cracked Fresh Pepper
4 ounces
Feta Cheese
4 ounces
Fresh Spinach, Chopped

Small Red Onion Diced
1/4 cup
Sour Cream

Eggs, Whisked
10-15
Cherry Tomatoes
3 small
Potato Skin On, Cubed
1
Red Pepper, Seeded, Diced
10 slices
Bacon, Diced, Fried
In a cast iron skillet fry bacon

Drain bacon on paper towels, leaving about 1 tablespoon grease on pan

Make sure pan is hot and add potatoes

Once they brown, turn and cover with a lid

Whisk sour cream into eggs, add fresh cracked pepper

Add onions and stir

Add peppers and mix in

Add spinach, bacon and egg mixture

Top with tomatoes and feta

Place in 350F oven for about 25 minutes, spinning half way

Allow Frittata to cool 10 minutes

Time to serve!!
