Cast Iron Chicken Cacciatore
In a cast iron pan, sauté some onions and peppers in olive oil. I used 1 Fresno and 1 jalapeño.

Sear chicken thighs skin side first and flip.

Add 2 tbsp tomato paste and stir into the veg.

Deglaze the pan with your favorite wine. I used Pinot Grigio.

Add one can of your favorite tomatoes. I used San Marzano.

Add 1 can of hot water and crush tomatoes into the veg.

Return and submerge chicken into sauce. Put in a 375 oven for 25 minutes.

Boil your pasta in salted water and cook to 2 min UNDER. Reserve 1c of pasta water and strain.

Add butter to strained pasta on low heat and stir.

Spoon a few ladles of sauce and store into pasta. Add the reserved pasta water and stir too.

Add grated cheese. I used pecorino romano. I also added 2 tablespoons of prepared basil pesto.

Remove chicken from the oven and let it sit for a minute and serve over pasta. Delicious!
