Cauliflower Corn Chowder

4 cups
Cauliflower Florets
2 tablespoons
Extra Virgin Olive Oil
1/2 teaspoon
Salt
1/4 teaspoon
Pepper
6 strips
Turkey Bacon (diced)
1/3 cup
Onion (fine dice)
2 cloves
Garlic (minced)
14 ounces
Creamed Corn

Evaporated Milk

Vegetable Stock
Prepare your ingredients before you begin. Preheat oven to 425F.

Toss cauliflower with 1 T oil, spread onto a baking sheet & season with salt & pepper.

Roast 20-25 minutes, tossing halfway, or until cauliflower is just fork tender.

Add oil and turkey bacon to a pot on med heat. Cook until crisp, stirring frequently.

Add garlic and onion and cook an additional 2-3 min or until onion is softened.

Pour in creamed corn, milk & stock. Cook to heat through. Add cauliflower. Season as needed.
