Cauliflower Pizza With Greek Yogurt Pesto
Process 2 heads of cauliflower in a food processor until it’s fine and the texture of rice. You’ll need to do this in few batches

Place all the cauliflower in a large bowl and microwave for 7 minutes. Then, stir the cauliflower and microwave another 7 minutes

Let the cauliflower stand for 10-15 minutes until cool enough to handle. Wrap in a thin kitchen towel and wring out all the excess moisture

Transfer cauliflower back to a large bowl and add garlic, salt, Italian seasoning, a pinch of pepper, and Parmesan stir until well combined

Add egg whites to the cauliflower mixture and stir until well combined

Divide the cauliflower into 4 balls and spread onto a parchment paper lined baking sheet. Leave a ridge for the crust

Bake at 400 until golden brown, about 30 minutes

While crusts bake, combine Greek yogurt, basil, and garlic in a small food processor until smooth and creamy. Scrape the sides as needed

With the food processor running, stream in olive oil until well mixed

Heat your grill to medium-high heat. Combine zucchini and Roma tomatoes with olive oil and season with salt and pepper

Grill the vegetables until charred, about 2-3 minutes per side

Once the pizza crusts are cooked, remove from the oven and preheat the broiler. Sprinkle each crust with Parmesan and broil for 2-3 min until golden

Spread the Greek yogurt mixture onto each of the pizzas

Top with the grilled vegetables and more Parmesan cheese

Place pizzas onto the grill until the cheese melts, about 2-3 minutes
