Preheat oven to 375 degrees F.

Scrub a dub the potatoes with cold water.

Grate the cheddar cheese.

Add 1 cup of the cheddar cheese and stir to combine. Scoop the mashed potato filling into the skins.

Sprinkle the remaining shredded cheddar cheese on top of the potatoes.

Roll the parsley in a ball and finely chop.

Preheat oven to 400 degrees F. Place potatoes in a baking sheet & heat for 15 minutes. Add parsley.
