Cheesy + Creamy Vegan Tomato Soup
You’ll need: diced tomatoes, onion, carrots, garlic, vegan butter, tomato paste, bouillon, salt, pepper, dried basil, miso paste, dairy-free cream.
First, sauté the onion, garlic, and carrot in the vegan butter. Stir in the seasonings and herbs.
Add 4 cups of water, diced tomatoes, tomato paste, and bouillon. Bring to a simmer.
When the veggies are tender, use your immersion blender to blend until smooth.
Then stir in the miso paste and dairy-free cream.
Serve hot topped with vegan feta or alongside a mountain of vegan grilled cheese!
