Cheesy One Pan Enchiladas
Heat oil in 10 inch oven safe pan or skillet over medium heat, add onion, garlic, peppers and spices

Cook until softened then add enchilada sauce store bought or homemade and chopped green chilies

Then stir in the salsa

Stir in the sour cream or Greek yogurt

Fold in the sliced tortillas, black beans

And the shredded chicken if using

Then top with the shredded cheese

Then bake until cheese is melted and gooey

You can bake it a few mins extra or put it under the broiler a couple of minutes to get some crispy edges if you would like

Then top with all your favorite toppings and dig in!!
