Cherry Oat Bars (Instant Pot)
Add pitted cherries to instant pot

Add in sugar and lemon juice

Pressure cook for 1 minute with a 10 minute natural pressure release

Stir in cornstarch slurry

Stir until thickened, then turn off Instant Pot

Refrigerate until cooled completely

Mix sugar, oats, flour, baking powder and salt together

Cut in with a pastry blender

Press 2/3 mixture into bottom of parchment lined square pan

Spread cherry filling over the top

Cover with remaining 1/3 oatmeal mixture

Bake in oven for 30-35 minutes

Let bars cool completely and then cut and serve

Enjoy with vanilla ice cream
