Chicken & Chorizo Risotto
A delicious easy risotto ready in 30 minutes

Add the butter onion & red pepper to pan & fry until soft

Add your chicken & chorizo, stir and fry for 3 minutes

Until it looks like this

Add the arborio rice

Add a little white wine (optional)

Add a teaspoon of tumeric & stir

Next pour in your stock & stir. Cover with a lid & simmer on low heat 15-20 mins. Stir occasionally

& the grated Parmesan cheese

Season with salt & black pepper

Stir all together. It should have a dropping consistency. Let it rest a few minutes

Serve with a sprinkle of fresh parsley
