Chicken And Jiffy Mix Dumplings
Sauté a diced medium onion and 2 ribs of sliced celery in olive oil in a Dutch oven.
Add 4 cups chicken broth, 1 cup water, and seasonings: 1/2 tsp salt, 1/2 tsp pepper, 1/2 tsp ground thyme, and 1 tsp chicken bouillon base (optional).
Add 3 cups cooked chicken and 1 1/2 cups frozen veggies.
Add cream of chicken soup—either homemade (my preference) or canned.
Stir to combine. Bring to a boil.
Mix 2 cups Jiffy baking mix and 2/3 cup milk to create a soft dough.
Add tablespoons of dough to the liquid. Reduce to a simmer.
Simmer uncovered for 8 minutes, then partially covered for 8 minutes.
