Chicken Fricassée with Shallots & Bacon
Add bacon strips to a skillet or oven-safe frying pan.

Cook until lightly crisp and set aside.

Add butter and place chicken thighs, skin-side down, in the pan.

Flip chicken thighs when golden and continue cooking.

Transfer chicken to a plate. Keep the pan hot and do not rinse it.

Add shallots and garlic.

Cook until shallots are tender and lightly caramelized.

Nestle chicken thighs back into the pan.

Sprinkle with bacon and top with thyme.

Pour white wine over top and bake for 30 minutes.
