Chicken Pesto Sandwich
Heat your grill to medium high heat. Place 1 large chicken breast between 2 sheets of parchment paper and pound to about 3/4 inch thickness
Rub the chicken with oil and sprinkle with salt and pepper
Grill chicken breast for about 8-9 minutes on the first side
Flip and grill for another 5 minutes or so. When the internal temperature reads 165 Fahrenheit, it’s done
Meanwhile, place sliced ciabatta rolls face down on grill for a few minutes until toasty
Spread 1 tablespoon of pesto on each half of the grilled rolls
Place a slice of mozzarella cheese on the bottom roll halves, followed by a piece of the hot chicken breast
Top the chicken with slices of Roma tomato, followed by arugula, then fresh basil leaves, and top with the other half of the rolls
