Chilled Natto Udon Noodle Bowl
2 Udon noodles, 2 pack Natto(100g), 2 Eggs, 2 Scallions, some Shredded nori, Mentsuyu(1 tsp Dashi powder, 3 Tbsp Soy sauce, 3 Tbsp Mirin)
Chop scallions : Chop scallion into small pieces.
Make soft boiled eggs : Boil water in a small pot, turn off the heat, put eggs, and leave for 10 minutes with the lid on.
Make mentsuyu : Put all the mentsuyu ingredients in a pot, bring it to a boil then turn the heat off.
Boil udon noodles : Boil the udon noodles according to the package.
Rinse udon noodles under running water and drain the water.
Mix natto : Mix natto, natto sauce and karashi(Japanese mustard) together.
Serve : Place udon, natto, scallions, soft boiled egg and shredded nori on a plate, and pour mentsuyu over.
Or serve the mentsuyu separately and pour over right before eating. Enjoy!
