Melt 125g choc and leave to cool. Cream 75g butter and 35g brown + 50g caster sugar together

For buttermilk substitute: In a measuring jug add 10ml lemon juice to 170ml milk, leave for 5 mins

In a bowl combine dry ingredients: 170g plain flour, 17g cocoa powder, pinch of salt, 3/4tsp bicarb
