Classic Butter Cake | Softest Cake Ever!
The softest, yummiest butter cake you'll ever make!
250 g margarine/butter 1 1/2 cup (300g) sugar 2 cups (280g) flour
4 tsp baking powder 4 large eggs 1/2 cup milk 3 tsp vanilla
Cream the margarine/butter until it is light and fluffy.

Add the sugar and continue to beat until the mixture becomes lighter in colour.

Add the eggs, one at a time, and beat until all the sugar has melted (about 5-10 minutes).

Make sure to stop and scrape down the sides with a spatula regularly.

Check if sugar has melted by rubbing the batter between two fingers (should feel completely smooth).

Combine the flour and baking powder together. Add it in 3 additions. Mix between each addition.

Alternate each addition of flour with an addition of milk (1/4 cup at a time).

Continue adding the flour and milk in this method: flour - milk - flour - milk - flour.

Add vanilla. Mix to combine. Scrape down the sides.

Pour into two 9" pans or one 13x9" pan. (Either greased and floured or lined with parchment).

Smooth the top and bang the pan on the countertop to release air bubbles.

Bake in a preheated oven at 120° Celsius for 40-50 minutes.

Once it is cooked, check with a toothpick and see if it comes out clean.
